Ingredients:
1 oz Patrón Silver blanco tequila
1 oz Cold brew coffee
12 oz Amaro (e.g. Averna)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
1 dash Xocolatl mole bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare coffee beans for garnish.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. Garnish with 3 coffee beans floated in a petal formation in the centre of the cocktail's foamy head.

Review:

This tequila-laced coffee cocktail is relatively light in alcohol and perfect as an aperitivo or digestive.

As a longstanding trustee of the UK's drinks industry charity, which until recently was called The Benevolent, it was the name that drew this cocktail to my attention. The Benevolent was founded in 1986 to support colleagues in the drinks industry in need. Its name was changed to the Drinks Trust in March 2020 to better convey its purpose.

Made it exactly as written and thought it was too sweet. 1 or 1/2 tsp of simple syrup should be adequate. Smooth, balanced and rather subtle. Opens up nicely after the pour.

Not unpleasant but the coffee overwhelmed the other ingredients. Maybe my espresso is too strong (I don't do cold brew)
